Chef de Partie

Hola! We are looking for a Chef de Partie to join our FOC Team on the sunny Sentosa Island!

What do we require?

  • Prior experience in a Chef De Partie role
  • Excellent practice in the use of various cooking techniques, ingredients, equipment and processes
  • Ability to multitask and perform your duties in a fast-paced environment
  • Knowledge about the best cooking practices
  • Good communication skills to work well with members of your team
  • Positive and friendly attitude and willingness to learn

What will you do?

  • Prepare menus in collaboration with your colleagues
  • Ensure adequacy of supplies at the cooking stations
  • Prepare ingredients that should be frequently available (vegetables, spices etc.)
  • Follow the guidance of the executive or sous chef and provide your input on new ways of presentation or dishes
  • Put the effort in optimizing the cooking process with attention to speed and quality
  • Enforce strict health and hygiene standards
  • Help to maintain a climate of smooth and friendly cooperation

Demi Chef de Partie

Hola! We are looking for a Demi Chef de Partie to join our FOC Team on the sunny Sentosa Island!

What do we require?

  • Basic kitchen operations knowledge
  • Ability to work in a fast-paced environment

  • Knowledge about the hygiene standards and ability to apply them accordingly

What will you do?

  • Maintaining all food preparation areas according to established standards of hygiene (clean and sanitize to meet HACCP standards)
  • Maintaining all cooking appliances, instruments, utensils, cutting boards, and dishes properly washed and appropriately stored
  • Assisting the Cook in preparation of ingredients (meat seasoning; washing, cleaning, peeling, and chopping vegetables, fruits, meat and poultry)
  • Promptly transferring meal ingredients from storage areas to the kitchen as per the Cook’s instructions.
  • Measuring accurately ingredients for the Chef de Partie, according to the recipes
  • Plating and presenting meal items as per the Chef de Partie’s instructions
  • Responsible for completing food preparations for your section
  • Receiving deliveries and verifying the accuracy and quality of the items ordered, assisting with unloading and proper placement
  • Assisting the Supervisor with inventory
  • Monitoring stock movement, responsible for ordering list for the supervisors in charge (ensuring minimum food wastage)
  • Ensure knowledge of the product is maintained and communicated to all relevant personnel
  • Learn and record skills and recipes from other members of the department

What will you do?

  • Properly clean and sanitize all food preparation areas according to established standards of hygiene
  • Wash and store appropriately all cooking appliances, instruments, utensils, cutting boards, and dishes
  • Assist the Cook with the preparation of meal ingredients, which includes washing, cleaning, peeling, cutting, and chopping fruit, vegetables, poultry, and meat
  • Perform basic cleaning duties and ensuring that work stations and kitchen are properly sanitised to meet HACCP standards
  • Promptly transfer meal ingredients from storage areas to the kitchen as per the Cook’s instructions
  • Ensure minimum kitchen wastage.

Floor Captain

What will you do?

  • Always greet and welcome guests promptly in a warm and friendly manner
  • Always thank and give a fond farewell to guests conveying anticipation for their next visit
  • Assist guest with table reservation and while seating
  • Ensure guest are serviced within a specified time
  • Present the menu, answer questions and assist with menu selections according to guests’ requirements (food allergies, dietary restrictions, special requests, etc)
  • Communicate additional meal requirements, allergies, dietary needs, and special requests to the kitchen
  • Anticipate any unexpected guests’ need and react promptly and tactfully
  • Always apply service techniques correctly at all times, and serving Food & Beverage items with enthusiasm
  • Serve food courses and beverages to guests
  • Set tables according to the type of event and service standards
  • Check with guests to ensure satisfaction with each food course and beverages
  • Responsible for clearing, collecting and returning food and beverage items to the proper area
  • Maintain cleanliness of work areas, china, glass, etc. throughout the shift

What will you do?

Guest Relations Executive

Hola! We are looking for a Guest Relations Executive to join our FOC Team on the sunny Sentosa Island

What do we require?

  • Positive, friendly attitude and good people skills to take the best care of our customers, making their experience with us unique and up to their expectations while working closely with our team
  • Good organization skills to juggle multiple tasks simultaneously
  • At least 1 year in a customer-facing position
  • Availability on weekends and public holidays

What will you do?

  • Provide full assistance to incoming inquiries via email or phone, introduce reservations to the system accurately, taking note of all essential information according to our procedures
  • Receive our guests at the entrance and accompany them to the table according to our seating procedures, always working closely with Operations Team, Service Operations Manager, shift leaders and other members of our staff
  • Monitor daily bookings and ensure assigned tables are prepared prior to guests’ arrival
  • Oversee reservations and financial transactions
  • Assist guests with special requirements (disabled, elderly, children)
  • Ensure our VIPs and Regulars receive a personalized service according to our procedures, establishing a friendly relationship with them
  • Coordinate and manage communication between guests and our team, follow up to ensure all guests’ concerns are resolved (be familiar with the work nature and responsibilities of floor staff)
  • Inform and explain to our guests our menu, and specials of the day (being familiar with our menu, promotions, events and service procedures)
  • Actively listen to and resolve guests’ general inquiries or complaints
  • Analyse guests feedback and online reviews and suggest ways to improve our service
  • Appraise team’s performance and prepare regular reports
